Wie kann der Informationsfluss zwischen Köch:innen und Produzent:innen verbessert werden?Der Erfolg der Versorgung über kurze Lieferketten erfordert einen effizienten Informationsaustausch zwischen den verschiedenen Akteuren. In der Innovationsgruppe Zukunftsgerichtete Landwirtschaft im Kanton Jura werden die Herausforderungen und Hindernisse besprochen, die die Zusammenarbeit zwischen Produzent:innen und Köch:innen in der Gemeinschaftsgastronomie erschweren. Akteure des FRIJ-Projekts «Cuisinons notre région» und aus dem Netzwerk von Swiss Food Research berichten aus ihrem Berufsalltag.
