Pflanzliche LebensmittelproteineAn beiden Tagen - 15. und 16. Mai - dreht sich alles um pflanzliche Proteine sowie um vegane und vegetarische Lebensmittel. Thematisch gliedern sich die Beiträge in Technologie bei der Herstellung und Entwicklung pflanzlicher Lebensmittel, Alternative Proteinrohstoffe, Qualität, Sicherheit und Sensorik. Der Teilnehmerworkshop, durchgeführt von der Ernährungsorganisation ProVeg Deutschland e.V., fokussiert auf Markttrends und verbraucherorientierte Innovationen.
