This meeting will focus on sensory, nutrition as well as food safety in Dairy- and Meat-Alternatives. Fermentation will play a key role in the future of plant-based food and alternative proteins in general, which is why we combine in this edition the Innovation Groups Proteins4Future and Bioconversion for the second time in 2 years. In addition, participants will gain valuable insights in the newly established Sproudz environment in Zollikofen powered by fenaco and already used by Outlawz Food and the Bakery Bakery.
